Ingredients to make Sonho da Palmirinha:

For mass:

1 kilogram of unleavened wheat flour

1 cup of warm milk (250 ml)

½ cup of sugar (80 grams)

 2 tablespoons of softened butter

 3 eggs lightly beaten

2 tablets of dry biological yeast (30 g)

 frying oil

 crystal Sugar

For the filling:

 1 can of condensed milk

 1 can of milk

 3 egg yolks

 2 tablespoons of cornstarch (cornstarch)

 lemon or orange zest

How to make Sonho da Palmirinha:

To make this dream bakery recipe start by dissolving the yeast in warm milk. In a bowl or bowl of a planetary mixer (with a bread hook) place the flour and sugar and mix.

Tip: Sift the flour, this helps to dissolve the lumps and achieve a lighter and more sandy dream dough.

Open a small hole in the center of the flour (as in the photo) and place the eggs, butter and milk with yeast there. Stir with a spoon, from the inside out, then knead with your hands or with an electric mixer for 5-10 minutes, until you get a soft dough that comes off.

Tip: If the dough does not come unglued, sprinkle a little more flour.

Shape the dough into a ball and place in a greased or floured container. Cover with a cloth and set aside in a cool place for 1 hour or until doubled in volume.

Tip: This resting time is essential for the yeast to take effect, resulting in an elastic, grown and fluffy dream mass.

After that time, divide the dough into balls a little bigger than the palm of your hand. Arrange on greased and floured baking sheets, leaving space between each one. Cover with a cloth and set aside again, to grow until the volume doubles.

Tip: The ideal weight of the dumplings should be 50-60 grams. Grease your hands with oil and shape the balls well so that they are smooth.

Meanwhile, prepare the filling: dissolve the cornstarch in the milk and place it in a pan together with the condensed milk, egg yolks and orange or lemon zest. Keep stirring until it thickens and turn off the heat. Allow to cool covered with plastic wrap touching the cream (to prevent the formation of a hard crust).

Tip: Pass the egg yolks through a sieve in order to filter their skin. This film is responsible for the smell and taste of egg.

After that time, heat the oil in a skillet. When it's hot (but not too hot) place 2-3 dregs at a time to prevent them from sticking together. Leave until golden and remove to a plate with absorbent paper.

Tip: The oil temperature is very important to prevent dreams from turning golden on the outside and raw on the inside. So keep the oil over medium heat.

Let Palmirinha's dreams cool a little and fill them with the cream, opening the dreams in half or using a confectioner's bag. Dip in crystal sugar and they're ready to delight everyone! Prepare this Palmirinha bakery dream and tell us what you think in the comments. Enjoy your food!
